Laboratory Sous Vide is a unique restaurant concept. Focussing on efficient service that presents healthy food from an exposed kitchen, this eatery seeks to redefine the fast-dining experience. And their immaculate restaurant is the perfect setting. Perfectly white with not a hair out of place, Laboratory is a minty-fresh mixture of gleaming whites, spotless glass and unfailing precision. Much like a laboratory, you might think, except with a warmth of character that invites guests to experience something new.
So, what is sous vide? Originating in France, this cooking method places food in a vacuum before being placed in a water bath to slow-cook. The result? Incomparable taste and texture. And you can expect just that with their vanilla cured salmon with a zingy slaw, the sous vide sirloin with fresh figs and rosemary frites and the chicken confit with a Yukon gold mash. Extracting every last ounce of flavour, these dishes have to be tasted to be believed.
