A Peruvian Japanese celebration of seafood served in a slick, contemporary dining room with sweeping views of the Burrard Inlet, Stanley Park and Point Grey.
Set just back from the city’s waterfront, the Ambleside location uses a palette of neutral colours and touches of light wood and also incorporates a theatre-like open kitchen and bar that invites guests to engage with the chef and sommelier teams.
Fabulously varied menus combine the highest quality local seafood with exotic ingredients such as aji amarillo (Peruvian yellow chili) and sakekazu (the lees left over from sake production).
Start with a selection from the raw bar, including freshly shucked oysters and housemade sushi, before moving on to the likes of roast yam soup, lobster and shrimp risotto, and sablefish with bok choy. There are even a few mouthwatering non-seafood options - try the cauliflower steak with the option to add braised shortrib.
The cocktail list changes to reflect the seasons by incorporating wildflowers and herbs, but there is always a killer selection of sours - of course the best Peruvian pisco sour in the northern hemisphere - not helpful for finding your sea legs!
